PROCESS + SORTING
natural process + hand sorted

The brightest single origin coffee in our line-up hails from the Cordillera mountain ranges of northern Philippines. This one of a kind coffee is harvested at its ripest moment and then sun-dried with the cherry skin still intact before it is depulped and dried. The parchment is then removed prior to being hand-sorted. This extra step helps remove any defective beans. This meticulous process results in the sweetest, brightest berry flavor out of all the coffee in the Philippines we've encountered.

The name 8 Ball comes from the story of how we sourced this coffee from the farmer. In February 2019, the Black 6 team was sourcing coffee around the mountain town of Kibungan. After obtaining only a limited amount of beans, on the way out of the mountains, the team decided to stop by a small village inquiring for any available coffee beans. Their search led them into a small pool hall hidden behind a local store where a few farmers were playing billiards. One farmer was pointed out to have a good lot of coffee and the team approached him. Reluctant to leave his game of billiards, the farmer, Ronnie, hopped into the team's van and brought them to his farm down the road. Much to the team's surprise, it was the same farm where they had stopped by earlier in the morning to take pictures. The farm sits on a mountain across from the municipal center of Kibungan, and it has a picturesque view of the mountain range. Ronnie proudly gave a tour of his farm to the team. And as luck would have it, he still had a good amount of coffee beans on hand. Interestingly, Ronnie told them that he saw the team from his house taking photos earlier in the day.

A month later, Ronnie’s coffee was roasted and sampled back in New York. His coffee had the most unique flavor profile when compared to all the Arabica coffee beans we've sourced from the Philippines. We really look forward to sharing this one of a kind coffee that is only available from Black 6 Coffee in limited quantities until the next harvest season. Please share with us your experience with this unique coffee.

How to choose your grind...
Everybody has their own preference for brewing coffee. We offer grinds for the following methods at the moment.
French Press – We use a coarse grind for the French press. Grind consistency is similar to that of kosher salt.
Drip - We use a medium grind with a consistency similar to table salt. Request this if you brew your coffee with a Chemex, Hario pour over or a coffee machine.
